Gault&Millau's review 2026

Located in the heart of the city, in a luxurious, carefully restored old building, the Stambolijski restaurant brings an interesting interpretation of the national cuisine. Start with an unavoidable selection of local delicacies and Balkan cheeses, steak tartare or salmon carpaccio. In the part of the warm appetizers there are fine fried stuffed peppers, Pirot đubek and prebranac, while the hearty veal soup in the old mountain way is ideal for warming up. A nicely prepared risotto with chanterelles, oyster mushrooms and porcini mushrooms can be an interesting next step. There is a few pastas on offer, followed by a section with vegetarian dishes, as well as salmon, sea bream and prawns. Soft and juicy leg baked in cream and horseradish sauce proves excellent meat treatment, and attention is also drawn to slow-cooked lamb breast, steak in oil and rump steak in prokupac sauce with truffle puree. The Stambolijski burger also includes tobacco, cracklings and leeks, pork neck is prepared with honey and beer, and there is also a good selection of steaks. At the end, there is a small attraction in the form of a giant panel on which desserts are presented. Date cake in warm vanilla sauce, here called - love at first sight, fully justifies the name. Lemon tart also deserves a sincere recommendation.
