Gault&Millau's review 2026

The New Balkan Cuisine concept is about local flavors from a different angle. Their focus is on natural ingredients and a thoughtfully designed menu that shows that guests want something more contemporary, but still deeply rooted in familiar flavors. At the new location, Dragoljub continues that idea as a return to the kafana spirit, a lighter, more urban and open version. The space pleasant, suitable for socializing or a quiet lunch, while the menu remains faithful to seasonal ingredients and local inspirations. Chicken skewers with porcini mushrooms and sage sauce show how a well-known dish can take on a new character. The meat is tender, while the creamy puree blends naturally with the earthy flavors of the mushrooms. The smoked pork shank makes a strong impression because the glaze gives it a slight sheen, the crackling salsa adds depth, and the sauerkraut and potatoes in crépine bring the dish closer to warm domestic tones. Sjenica sour cream adds softness and connects the flavors. Cake with dried plums and salted caramel with young kajmak brings a harmony of fruity sweetness and mild saltiness, a light but striking end to the meal. Each plate shows that tradition can be redefined and still keep its soul.
