This offshoot of the New Balkan Cuisine gastronomic concept brings a contemporary view of local flavors, combining well-known ingredients in imaginative interpretations. A pleasant space and a carefully created menu open the story in several acts. Already at the beginning of the meal, the marinated leaflets of rozbuff show the philosophy of the house. Thin layers of meat, imbued with aromas of herbs, gently blend with the accompanying elements on the plate and bring the palate into the rhythm of subtle, thoughtful flavors. The juicy, melt-in-your-mouth flesh is placed on a crispy burek dough base, while toasted pumpkin seeds bring nutty heat, and the homol straćatela brings a creamy note and harmony. Speaking of harmony, pork offers a fine balance of crispy crust and soft, juicy meat. The sweet touch of the vegetable cake gently softens the intensity of the meat, while the mozha with mustard emphasizes the spiciness. Round off the meal with sabajon with fruit, a dessert that combines creamy softness with fruity liveliness. The roasted merengo adds a slight sweetness, while the crunchy crumbs introduce a contrast that makes the whole experience playful. Iva offers an experience that invites a light exploration of taste, a blend of local and modern, with a clear identity and a carefully built balance on each plate.
