Begin with the goose liver terrine - a silky preparation beneath a fine layer of confit fat, served alongside toasted black brioche and a sauce of wild fruits and pear. Order the wine before you start; you will not want to pause. The lamb is not to be missed. Each bite yields slowly and deliberately, first settling on the palate before melting away entirely. Pulled generously from the bone and paired with young kajmak and beautifully baked potatoes, it is a masterclass in honest, straightforward cooking. Finish with the chocolate mousse—creamy, composed, and disarming in texture. Blueberries and currants introduce a bright, citrus-edged counterpoint that keeps the richness in check. When the meal is done, step onto the terrace.
