Nestled in a fairy-tale village at the foothills of Fruška Gora, Fig offers a serene vista of the Rakovac Monastery - a 16th-century sentinel of regional history. Here, the kitchen translates local ingredients into a universal language of refinement. Begin with the earthiness of roasted beets, a remarkably crisp gibanica, or the seductive depth of oxtail rolls. The journey continues with a ‘fairy-tale’ barley and seasonal mushroom dish; the grain is expertly prepared to a perfect al dente - a playful texture that amuses the palate - crowned with delicate Parmesan shavings and the bright pop of pickled red onions. It is a dish so culturally resonant it feels as foundational to the land as the monastery itself. To conclude, the pumpkin dessert offers a masterclass in deconstruction. If Jacques Derrida were to reimagine the traditional pumpkin pie, this would be his answer: a velvet pumpkin purée, light as a gianduja custard, served beneath shards of buttery, flaky pastry. Fig deserves an ovation for its imagination, technical precision, and profound respect for its terroir.
