Rarely anyone in Belgrade can boast of this quality of raw ingredients and such a clean execution of Japanese classics. Begin with perfectly salted edamame - perfectly salty, gently cooked soybeans with a natural sweetness, a simple but unmistakable introduction to the meal. Sea bass usuzukuri, thinly sliced fresh sea bass fillet, served with classic Japanese ponzu sauce, a combination of soy sauce and citrus, with the addition of olive oil, sesame seeds, and spring onions. The bite is extremely tender, with a long, pleasant finish. To cut the flavors a bit, pork gyoza, crispy steamed and baked dough filled with aromatic, juicy minced pork, comes to the table. The marine notes represent the miso sea bass, perfectly soft and juicy, with a pleasant salinity and a crispy crust, served with a basil and soy sauce, similar to Japanese pesto, which further emphasizes the umami and gives the dish an aromatic depth. Be sure to try the kimchi to experience “kokumi” - a depth of flavor that lingers. Sakura cultivates a thoughtful fusion of Japanese and Asian flavors, where attention is paid to balance, technique and clarity of taste, and where umami has its rightful place.
