Gault&Millau's review 2026

Šaran is an elegant fish tavern on the Danube’s banks in the fairytale old part of the Zemun quay. Their fresh seafood and river products are so exceptional they could rival Tokyo›s Tsukiji market. The tuna carpaccio offers a true gastronomic catharsis: beautifully cut chilled tuna steak topped with first-class olive oil. Spread a bit of butter on toast, add a pinch of salt, and layer the rich tuna with its salad garnish, add an orange slice and drizzle a bit of olive oil for an absolutely divine bite. Their classics, like the fish stew and smoked carp pâté, are local staples, but the monkfish is a revelation - prepared simply in oil, drizzle a bit of olive oil and add garlic to highlight its natural quality. To finish, the Crème Suzette is a sophisticated hybrid of crème brûlée and crêpes Suzette. This creative dessert feels like a conquest of hearts, blending French technique with Mediterranean flair. It feels like a Corsican chef wanted to blend French cuisine with the flair of Italian south. We haven›t tried putting olive oil on this dessert, but we›re sure it wouldn›t hurt there either.
