Set within a meticulously restored historic landmark in the heart of Niš, Stambolijski offers a sophisticated reimagining of Balkan cuisine. Begin your journey with a curated selection of regional delicacies and artisanal cheeses, or opt for the refinement of a steak tartare or salmon carpaccio. For a warm introduction, fine fried stuffed peppers, Pirot đubek and baked beans, while the hearty veal stew, prepared in the rugged Stara Planina style, provides a soulful warmth. A nicely prepared risotto with chanterelles, porcini and oyster mushrooms can be an interesting next step. There are several pastas on offer, followed by a section with vegetarian dishes, as well as salmon, sea bream and shrimp. The kitchen’s mastery of meat is evident in the succulent leg of lamb, slow-baked in a rich kajmak and horseradish sauce, or the rump steak finished with a bold prokupac wine reduction and velvet-smooth truffle purée. For a playful twist, Stamboliski pljeskavica features shredded cracklings and leeks, while the pork neck is glazed in honey and beer. The experience concludes with a theatrical flourish: a giant panel presenting artisanal desserts, including the signature ‘Love at First Sight’ - a warm date cake in vanilla sauce - and a zesty, refined lemon tart.
